La scuola dell’acciuga

A workshop dedicated to the traditional art of salt-cured anchovies, led by Mastro Acciugaio Michele Senno.
After a brief introduction to the history of anchovies and the traditional craft of the acciugaio, participants will roll up their sleeves and get hands-on, learning the techniques involved and preparing their own “arbanella” of salt-cured anchovies with Michele, to take home at the end of the experience.

WORKSHOP TIMES: 11:30 AM – 5:00 PM
Workshop lasting approximately 1 hour.
Kit included: anchovies, jar, gloves and apron. At the end of the workshop, each participant will take home a sample jar prepared during the activity.
