Chiara Pavan is the chef of Venissa, the Michelin-starred and Michelin Green Star restaurant where she leads a sustainability-focused kitchen.
Creator of the concept of Environmental Cuisine, she works to reduce food waste while promoting local ingredients and the responsible use of invasive lagoon species.
In 2024 she received Gambero Rosso's No Food Waste Award and was named among Forbes Italy's 25 Most Influential Chefs.
In 2025 she was honoured with Identità Golose's No Waste Award and received Two Knives at The Best Chef Awards.
Her first book, Environmental Cuisine (Mondadori, 2026), will be published on 28 April.
